Ingredients
- 1 can simple truth solid packed pumpkin
- 1 cup all-purpose flour
- 3 1/2 cups cake flour
- 1 cup granulated sugar
- 1 stick softened unsalted butter
- 1/3 cup vegetable or canola oil
- 1/2 tablespoon cinnamon
- 2 teaspoons baking soda
- 1 teaspoon ground nutmeg
- 2 tablespoons softened cream cheese

Instructions
- Preheat your oven to 350 degrees F.
- Line a cookie sheet with a silicone mat or parchment paper.
- In a large bowl, combine your canned pumpkin, softened butter, oil, softened cream cheese and sugar.
- In a separate bowl, whisk together all of the flour, baking soda, cinnamon and nutmeg.
- Slowly fold the flour mixture a little at a time into the pumpkin mixture. (The dough should be sticky, but easy to form into balls of dough.Add more cake flour if the mixture is still wet.)
- Split and roll the dough into 8 large balls. Place on baking sheet and sprinkle tops with cinnamon.
- Bake for 20 minutes.
