Ingredients
- 2 cups Kodiak Buttermilk Flapjack Mix
- 2 cups milk
- 1 1/2 cups fresh blackberries
- 1/4 cup water
- 3 tablespoons sugar
- 1 teaspoon lemon juice
- syrup and butter for topping
- coconut oil to cook flapjacks in skillet

Instructions
- In a medium sized bowl, combine 2 cups of the Kodiak flapjack mix with 2 cups of milk.
- Heat 1/2 tablespoon of coconut oil in a skillet over medium/high heat.
- Cook your flapjacks in the coconut oil (about 2-3 minutes on each side).
- Wash & dry the blackberries.
- In a small saucepan, cook 1 cup of blackberries, water, sugar, and lemon juice on medium/high heat for about 4 minutes, stir occassionaly.
- Pour the berry compote mixture into a blender or food processor and puree pulsing it 3-4 times.
- Transfer the berry compote into a dish.
- Plate your flapjacks and top with butter, syrup and the blackberry compote. Use the extra 1/2 cup of blackberrries for topping and presentation.
