Perfect Vegetable & Beef Soup
Easy, full of flavor, and unique with a secret sauce addition!
Prep Time 15 minutes
Cook Time 20 minutes

Ingredients
  • 1 pound Simple Truth Organic Ground Beef
  • 1 teaspoon minced garlic
  • 1 14.5 ounce can Fire roasted diced tomatoes use juice
  • 1 19 ounce can Progresso tomato basil soup
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried basil
  • 1 tablespoon worcestershire sauce
  • 2 teaspoons tomato paste
  • 1 12 ounce bag of frozen mixed vegetables (corn, carrots, green beans, green peas)
  • 1 cup frozen sweet corn
  • 1 12 ounce bag of frozen lima beans
  • 2 cups frozen diced potatoes (I used Ore-Ida Potatoes O'Brien with the pepper mix)
  • 1 1/4 32 ounce cartons beef broth (so you can buy 2 -32 ounce cartons)
  • 2 teaspoons olive oil

  • 2 cups frozen diced potatoes (I used Ore-Ida Potatoes O'Brien with the pepper mix)
  • 1 1/4 32 ounce cartons beef broth (so you can buy 2 -32 ounce cartons)
  • 2 teaspoons olive oil
Instructions
  1. In a large dutch oven or soup pot, heat 2 teaspoons of olive oil. Add the minced garlic. Cook until fragrant. Add in the raw ground beef. Cook until brown and fully cooked. Drain any excess grease and return meat back to pot.
  2. Pour in the can of diced tomatoes with the juice. Stir to combine. Pour in the can of tomato basil soup. Stir to combine.
  3. Stir in spices. (salt, pepper, parsley, basil)
  4. Stir in special sauce (Worcestershire)
  5. Stir in tomato paste
  6. Pour in mixed veggies, corn, lima beans, and potatoes all from frozen. Stir to combine.
  7. Pour in 1-32 ounce beef broth plus 1/4 of another 32-ounce beef broth. Stir to combine.
  8. Cover with lid and let simmer on medium-low for 20-30 minutes. If it starts to bubble over turn to low. ENJOY!
