Kickin’ Chicken Baked Meatballs

Have you ever had a chicken meatball?? This is about to be your new favorite go to low-carb, quick & easy snack, main entree, or fun appetizer! Even your kids will rave about how tasty these are! The crispy bottoms and moist flavorful insides will make you mom, dad, or host of the year!! ( ;

Lets get to rolling!! Delicious baked chicken meatballs coming right up!!

  1. First things first! Let’s get organized! On your counter you should have all of the following ingredients and tools pulled out to make your baked chicken meatballs.
  • 1/2 measuring cup
  • medium mixing bowl
  • mixing spoon/spatula
  • 2 sheet pans
  • small cookie scoop or spoon
  • foil
  • non-stick spray
  • 1 pound ground chicken
  • 1 egg
  • bread crumbs
  • shredded parmesan cheese
  • olive oil
  • salt
  • pepper
  • paprika
  • dried parsley
  • garlic powder

2.Preheat your oven to 400 degrees. Grab your two sheet pans and cover with foil, lightly spray over the foil with nonstick spray!

3.Grab a medium sized bowl. Mix all of the following ingredients using your mixing soon or spatula:

  • 1 pound ground chicken
  • 1 egg
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup panko crumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil

4.Using a small cookie scoop, spoon, or your hands roll the meat mixture into 20 small meatballs. Place spread out evenly on the sheet pans. Bake for 25-30 minutes or until golden and cooked through. ENJOY and sprinkle with extra parsley! Serve with your favorite dipping sauce, I loved it in BBQ!

Instructions

  3. Use a small cookie scoop, spoon, or your hands to roll the meat mixture into 20 small meatballs.
  4. Evenly spread out the meatballs on the sheet pans.
  5. Bake for 25-30 minutes, or until golden and cooked through. Sprinkle with extra dried parsley and serve warm with your favorite dipping sauce, I loved it in BBQ!
  6. You can also freeze these to use for salads, soups, or just reheat to eat by itself. ENJOY! (:
