Ingredients
- 4 fresh salmon fillets
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup plain greek yogurt
- 1/2 cup fresh cilantro
- 2 limes juiced
- 1 teaspoon honey
- 1 bunch kale chopped small
- 2 oranges
- 1 grapefruit
- 1 avocado sliced
- 1 cup quinoa cooked

Instructions
- In a bowl combine the olive oil, smoked paprika, garlic powder, salt, pepper.
- Brush mixture over salmon.
- Heat a medium size skillet over medium-high heat. Add the salmon, skin side facing up. Sear the salmon for 3-4 minutes and then flip and cook for another 5 minutes or until the salmon is done. This will vary depending on the size of your salmon.
- To make the dressing: In a blender, mix the yogurt, cilantro, lime juice, honey and a large pinch of salt.
- Add the kale to a large bowl and pour over the yogurt sauce. (Pour as much dressing as you prefer)
- Add the oranges, avocado, and quinoa and gently toss to combine. Divide the salad among 4 and top each with salmon.
