In a microwave safe bowl, microwave your minced cauliflower for 7 minutes.
Let the cauliflower cool for 10 minutes.
Wrap cauliflower in a clean dish towel and squeeze out extra water.
Pour back into bowl.
Add the mozzarella, parmesan, eggs, oregeno, pizza seasoning, salt, pepper, and onion powder to the bowl with the cauliflower. Mix until well combined.
On a greased sheet pan, shape mini pizzas with the cauliflower mixture.
Bake the crust for 15-20 minutes, or until the tops start to turn golden brown.
Remove from oven. Top with the sauce, cheeses, mini pepperonis, and seasonings.
Bake for an additional 5-8 minutes, or until cheese is bubbly.
