Gluten-Free Chocolate Chip Oatmeal Protein Muffins
Gluten-Free, Protein-Packed and FULL of flavor! My favorite part about these muffins is the crystalized sugar & oat crumble topping that bakes beautifully into these muffins…YAS! These muffins are unique because they contain quinoa flour, which provides gluten-free protein and coconut sugar which provides a caramelized brown sugar flavor. (Truly melts in your mouth) Even though these are a bit healthier for you than normal muffins, you certainly won’t be sacrificing flavor!

Instructions
  1. Preheat your oven to 350 degrees F
  2. In a bowl, mix the quinoa flour, oats, baking powder, soda, salt and cinnamon
  3. In another bowl, mix the oil, coconut sugar, brown sugar, eggs, vanilla and greek yogurt
  4. Pour the wet ingredients into the dry ingredients. Mix until well combined.
  5. Fold in your chocolate chips
  6. Place muffin tins into a 12 count muffin tin, or grease. Pour the batter evenly among each cup (fill untill almost full)
  7. In another bowl, mix together the crumble topping ingredients.
  8. Spoon a large spoonful of the crumble topping onto each muffin.
  9. Bake the muffins for 15-20 minutes or until done in the center. Let the muffins cool for 10 minutes. ENJOY!

Quinoa is gluten-free and high in protein and that is why substituting all-purpose flour for quinoa flour is a great option for a healthier more substantial muffins.
