Easy Bake Battle - Deconstructed Poppy Seed Chicken
An elevated twist on a classic southern casserole "poppy seed chicken" This recipe I created on Episode 2 of Easy Bake Battle!! The challenge was to only use canned or frozen foods. You can substitute things like fresh lemon for bottled lemon, and heavy cream for evaporated milk etc... I am just posting exactly what I did for the challenge. (:

Ingredients
  • 4 frozen chicken breast (you can also use fresh I just used frozen for the challenge)
  • mayo
  • olive oil
  • salt
  • pepper
  • tarragon
  • 30 ritz crackers
  • 2 TBSP poppy seeds
  • 1 can cream of chicken
  • 1/3 cup chicken broth low sodium
  • 1/3 cup evaporated milk or heavy cream
  • 1 TBSP lemon juice
  • dried parsley

  • 2 TBSP poppy seeds
  • 1 can cream of chicken
  • 1/3 cup chicken broth low sodium
  • 1/3 cup evaporated milk or heavy cream
  • 1 TBSP lemon juice
  • dried parsley
Instructions
  1. Preheat your oven to 425 degrees. Cover a sheet pan with foil.
  2. Place chicken breast on the foil. Coat the tops of each frozen chicken breast with mayo ( you can also use plain greek yogurt).
  3. Sprinkle salt, pepper, and tarragon over each coated chicken breast. Drizzle with olive oil.
  4. In a large ziplock bag crush 30 or so ritz crackers with the back of a wooden spoon to a crumb consistency. Pour poppy seeds in the cracker mix and shake well.
  5. Press a generous amount of the cracker crumb mix on each chicken breast.
  6. Cover with foil and bake about 25 minutes removing the foil the last 5 to crisp the crackers. Use a meat thermometer to make sure you hit 165 degrees and to ensure you do not overcook the meat.
  7. Start your sauce. In a skillet saute a teaspoon of minced garlic. Once fragrant pour in 1/3 cup of chicken broth, 1 can of cream of chicken, and 1/3 cup of heavy cream OR evaporated milk ( whatever you have on hand) . Mix well adding in the 1 tablespoon of lemon juice, 1/2 teaspoon of salt, 1 teaspoon of tarragon, 1 teaspoon of dried parsley, and a sprinkle of pepper. Cooking over high bring to a bubble until thickened.
  8. Build your plate. Smear the sauce on the bottom of your plate, placing the poppy seed chicken on top. Pair with my roasted broccoli (frozen hack from episode 2) ENJOY friends!

    Just finished watching the Netflix episode with your recipe in it and jumped onto Google looking for something similar. So happy to have found this page!! What can I use as a replacement for the cream of chicken? No halal options available
