Ingredients
- 2 cups basmati rice
- 3 eggs
- 1 cup corn fresh, frozen, or canned
- 1 cup sweet green peas fresh, frozen, or canned
- 3 whole large carrots cut into small pieces
- 1/2 cup green onions cut into small pieces
- 3 tablespoons chicken broth
- 3 cloves garlic minced
- 1 tablespoon ginger root minced
- 1/2 teaspoon chili pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons soy sauce
- 1 tablespoon siracha
- 2 teaspoons sesame oil
- 2 tablespoons olive oil vegatable oil works too
- 1 1/2 tablespoons coconut oil
- Thai Kitchen Pineapple & Chili Sauce
- Siracha Mayo

Instructions
- Cook 2 cups of Basmati rice. ( I use a rice cooker, and it is much faster) set aside.
- Preheat oven to 400 degrees F.
- Toss chopped carrots in a drizzle of olive oil and bake for 10 minutes, or until softened a bit.
- Set carrots aside once cooked.
- In a large Wok or deep skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the minced garlic and ginger. Sauté until fragrant.
- Add carrots, peas, green onions, and corn to the pan. ( If you are using frozen veggies, make sure they are thawed first)
- Once veggies are sautéed, set aside in a bowl.
- Add another drizzle of olive oil to the pan. Whisk your 3 eggs in a bowl and pour eggs into pan.
- Let sit for 20 seconds and scramble until cooked through.
- Add the rice to the pan with the eggs.
- Add the veggies back to the pan.
- Stir the rice well to mix ingredients.
- Add the salt, pepper, chicken broth, sesame oil, coconut oil, siracha, and chili flakes to the rice.
- Stir in the Pineapple & Chili sauce to your liking.
- Continue to fry rice for 3-4 minutes. Add another tablespoon of olive oil. Mix well.
- Remove from heat. Drizzle with siracha mayo and more green onions.
- Serve and enjoy!
Recipe Notes
This dish can be delicious several different ways!! Be creative and use whatever veggies you have in your fridge. Fried rice can work with serveal different types of sauces, just find the one you prefer. ENJOY FRIENDS!
